Carrot Cake Protein Balls
Preparation time: 10 minutes
Servings: 16-18 portions
Ingredients:
- 128 g raw cashews
- 95 g rolled oats
- 64 g Medjool dates
- 1 carrot, grated
- 113 g unsweetened applesauce
- 1 scoop vanilla protein powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 64 g pecans, chopped
- 42 g shredded unsweetened coconut
Instructions:
- Add cashews, oats, dates, applesauce, protein powder and spices to a blender.
- Blitz until shopped.
- Add carrot and pecans and process until smooth.
- Shape the mixture into balls and roll in coconut.
- Serve.

- 3.5 g fat
- 11.8 g carbohydrate
- 4.3 g protein
