Carrot Cake Protein Balls

Servings: 16-18 portions

Ingredients:

  • 128 g raw cashews
  • 95 g rolled oats
  • 64 g Medjool dates
  • 1 carrot, grated
  • 113 g unsweetened applesauce
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 64 g pecans, chopped
  • 42 g shredded unsweetened coconut

Instructions:

  1. Add cashews, oats, dates, applesauce, protein powder and spices to a blender. 
  2. Blitz until shopped.
  3. Add carrot and pecans and process until smooth.
  4. Shape the mixture into balls and roll in coconut. 
  5. Serve.
