Ingredients:200 g raw cashews, chopped10 medjool dates, pitted1 lemon, zested1/2 tablespoon lemon juice64 g shredded unsweetened coconut1 tablespoon chia seedsA pinch of salt Instructions:Add cashews to a blender and blitz until meal is formed.Add dates, lemon zest, lemon juice, coconut and salt.Process until smooth.Add chia seeds and blitz to combine.Shape the mixture into balls. Serve.
