Lemon Bliss Balls

Ingredients:
- 200 g raw cashews, chopped
- 10 medjool dates, pitted
- 1 lemon, zested
- 1/2 tablespoon lemon juice
- 64 g shredded unsweetened coconut
- 1 tablespoon chia seeds
- A pinch of salt
Instructions:
- Add cashews to a blender and blitz until meal is formed.
- Add dates, lemon zest, lemon juice, coconut and salt.
- Process until smooth.
- Add chia seeds and blitz to combine.
- Shape the mixture into balls.
- Serve.
