Lemon Bliss Balls

Ingredients:

  • 200 g raw cashews, chopped
  • 10 medjool dates, pitted
  • 1 lemon, zested
  • 1/2 tablespoon lemon juice
  • 64 g shredded unsweetened coconut
  • 1 tablespoon chia seeds
  • A pinch of salt

Instructions:

  1. Add cashews to a blender and blitz until meal is formed.
  2. Add dates, lemon zest, lemon juice, coconut and salt.
  3. Process until smooth.
  4. Add chia seeds and blitz to combine.
  5. Shape the mixture into balls. 
  6. Serve.
