Strawberries Cream Energy Balls

- 100 g raw mixed nuts
- 60 g dates, pitted
- 25 g frozen strawberries
- 20 g strawberry protein powder
- 2 tablespoons honey
- 2 teaspoons sweetener of choice
- Shredded coconut, for coating
- Add nuts to a blender and blitz until crumbled.
- Add dates and pulse to combine.
- Add strawberries, protein powder and sweetener, process until smooth.
- Shape the mixture into balls and roll into shredded coconut.
- Leave in a fridge for 1 hour
